Keep in mind that if you buy stew beef chunks, they will work great in this easy beef stroganoff recipe but you’ll need to cook them longer so they aren’t tough. A lot of readers have commented that they used their pressure cooker to soften stew meat before making the recipe – such a great idea! Nicer cuts of beef will be more tender which can be important in this dish since it is cooked quickly.

Notes

You can use beef chunks of any kind or ground beef in this recipe.

The beef chunks will be more tender if you use a nicer cut of meat. I have used beef stew chunks in the past, but they can be tough. Cooking them longer will help. We actually love this recipe with ground beef, just be sure to drain off the excess grease.

I also love using leftover beef in this recipe. It’s a great way to use leftover steaks, roast, or anything other leftover cut you don’t want to waste. Just omit steps 1 and 2 and start by sautéing the onions.

FAQs

What is stroganoff sauce made of? ›

What is stroganoff sauce made of? Stroganoff sauce is a sour cream gravy made with beef broth that's thickened with flour. It's flavoured with mustard and has mushrooms in it. I love the pale brown creamy colour against the deep golden brown seared beef!

How do I thicken up my stroganoff sauce? ›

Use one tablespoon cornstarch mixed with one tablespoon cold water (aka a cornstarch slurry) for each cup of medium-thick sauce. Thoroughly mix the cornstarch and water together, then pour into your sauce. Cook and stir over medium heat until thickened and bubbly.

What can I substitute for sour cream in stroganoff? ›

Greek yogurt is a healthy alternative to the traditionally used sour cream in beef stroganoff recipes, so you can be confident that your family is getting a satisfying, healthy meal. Fresh dill and paprika will provide a sweet, slightly smoky garnish to top off the dish.

Why is my beef stroganoff not thickening? ›

Ensure it's well mixed, aiming for a smooth consistency without lumps. Once your slurry is ready, slowly introduce it to the simmering stroganoff, stirring continuously. Maintain a gentle simmer as you do this, as boiling might cause the cornstarch to break down, losing its thickening power.

How to add more flavor to beef stroganoff? ›

Quartered mushrooms and a combination of pearl onions and shallots give the finished dish a more interesting texture and flavor. Adding gelatin to the chicken stock gives it more body, letting the sauce come together more tightly to coat the meat and noodles.

Will sour cream thicken a cream sauce? ›

For an add-in that both thickens and enhances flavor, turn to a versatile, dairy-forward ingredient: sour cream. Sour cream is a common add-in for thickening soups and sauces, but it can also be stirred into gravy for a touch of tang and a smooth, creamy finish.

Is it better to make gravy with flour or cornstarch? ›

Browning adds more flavor to the gravy and gets rid of the raw flour taste. You're basically making a roux. We find that a flour-based gravy holds up better and reheats better later, which is why we tend to prefer using flour over cornstarch to make gravy unless we have a guest who is eating gluten-free.

How do you add sour cream to stroganoff without curdling? ›

The secret here is to wait to add the sour cream until the very end, temper it with a bit of the hot broth and then add it to the pan just long enough to warm it, as boiling can cause it to curdle.

What can I use if I don't have milk for stroganoff? ›

A stroganoff sauce usually consists of sour cream, mustard, and chopped fresh herbs. This version replaces the sour cream and heavy cream with coconut milk and beef stock to keep it dairy-free, then added fresh parsley for extra flavor. It's the perfectly creamy sauce to serve over meat, noodles, rice, or potatoes!

Is mayonnaise a good substitute for sour cream? ›

Mayo is a great sour cream substitute. It can be used as a 1:1 replacement in both baking and dips. You'll lose some of that tang that sour cream offers, but it still does a great job at adding moisture to baked goods. Plus, it's relatively the same texture as sour cream, which makes it a great sub in dips and sauce.

Can I use water instead of beef broth in beef stroganoff? ›

You can make a stew with water but beef broth is a better choice. The water will pick up the flavors of the stew's ingredients, it won't be flavorless, but you'll get a better tasting stew if you use broth.

Will adding sour cream thicken soup? ›

Another option for thickening soup is by using dairy like sour cream or yogurt. Start with a small dollop and stir before checking the consistency and adding more. We recommend using plain yogurt so you don't alter the taste of the soup. You can also use cream if you prefer.

How do you stop cream curdling in beef stroganoff? ›

How do you keep sour cream from curdling in beef stroganoff? Remove some of the liquid from your stroganoff and allow it to cool. In a small bowl, take several tablespoons of the sour cream (or however much you require) and then add a teaspoon of the cooled liquid from the stew.

What does stroganoff taste like? ›

I think of beef stroganoff as having the warm comforting taste of a slow-cooked stew with the cooking style of a stir-fry. In this beef stroganoff recipe, thinly sliced beef is sauteed until just sealed, but still rare (and never chewy!)

Is Hamburger Helper the same as beef stroganoff? ›

The difference between a traditional beef stroganoff and the Hamburger Helper version is the meat. The traditional version has cuts of beef, while the Hamburger Helper version uses ground beef. I decided to stick with that for my recipe! I added in more vegetables and the homemade sauce was really easy to make.
